Air Fryer Zucchini

Super quick, easy and tasty, Air Fryer Zucchini is on regular rotation for meals. Tender, perfectly seasoned and air fried with just a hint of oil, this zucchini never fails to please at the table!

Helpful equipment

  • Air Fryer Toaster Oven
  • Removable wire air fryer basket
  • Air fryer pan


  • 2 zucchini
  • ¼ – ½ teaspoon salt or to taste
  • black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon parsley
  • 2 teaspoons oil
  • 2 tbsp. grated parmesan cheese


Step 1
Quarter the zucchini lengthwise and then cut them into ¼ inch thick wedges.

Step 2
In a bowl toss the zucchini with salt, black pepper, garlic powder, parsley and oil.

Step 3
Spread the zucchini out on a single layer in your air fryer basket.

Step 4
Air fry for 10 minutes at 325 F.

Step 5
Carefully sprinkle parmesan cheese over the zucchini and allow to melt (inside the oven) before removing the basket.


  • This recipe cuts zucchini into small, pie-shaped morsels that are perfect for air frying. While cutting zucchini this way is not essential, the air frying time and temperature are tailored for these bite-sized pieces.
  • To prepare zucchini, start by removing the ends and slicing it down lengthwise. For each zucchini half, make another lengthwise cut to produce four wedges. Arrange these wedges horizontally, skin side down, and slice vertically down every 1/4th inch to create small, uniform pieces.
  • Take care to spread the zucchini pieces out in a single layer — without overlapping — in the air fryer basket. I can fit about one full, chopped zucchini into my air fryer basket at a time, so air fry in batches if necessary.
  • A removable air fryer basket with a grid-like pattern is best for allowing moisture to drip down, and for preventing liquid from pooling around the zucchini, ensuring that the zucchini does not become soggy during cooking.
  • For lovely, slightly charred parmesan cheese bits, add grated parmesan cheese to the zucchini while tossing with salt, garlic powder, black pepper and parsley seasonings before air frying.
  • Some other ideas for variations: season with oregano, thyme or basil.
